Zoodle Shakshuka 

1 cup of zucchini noodles 

6 large tomatoes diced 

3 cloves of garlic minced 




1/3 cup of fresh chopped cilantro

4 eggs

In a large pot, heat up 1 tsp of olive oil. Sauteed the garlic until translucent. Add the chopped tomatoes and simmer for about 30minutes. Add the spices and mix very well. Add the zucchini noddles and the eggs. Cover and cook for an additional 5 to 8 minutes. Sprinkle some fresh chopped cilantro on top. 



  • 8 large tomatoes
  • 4 garlic cloves minced
  • 4 eggs
  • 1 tsp salt
  • 1 tsp pepper
  • 1/2 tsp cumin
  • 1 paprika
  • Fresh chopped cilantro

Dice the tomatoes in small pieces. Heat up olive oil in a medium size pan, add the garlic. Roast for 2-3 minutes on a low fire and add the tomatoes. Add the spices and mix with a wooden spatula. Cook gently until the tomatoes become very soft, about 30 minutes. Add the eggs and cook for 6 to minutes. 
Top it with fresh cilantro.
