This dish became a regular once a week dinner for the past couple of weeks. It’s easy to make, doesn’t require too many ingrendients and can be eaten cold or warm. I make it with fried eggs but it can also be made with pulled chicken.
- 1 box of rice noddles
- 1 cup of cooked broccoli
- 4 eggs
- 1 tbsp of olive oil
- 2 scallions diced
- 1/3 cup of fresh cilantro
- 2 tbsp of soy sauce
- Sriracha
Heat up water in a large pot. Once the water is boiling, turn the fire off. Add the noodles and immerse the noodles for about 6 to 7 minutes. Rinse them under cold water and set aside.
Heat up one tablespoon of olive oil in a large skillet, and scramble the eggs.
In a large bowl, combine the rice noodles, cooked broccoli, eggs, scallions, cilantro, soy sauce and mix very well. Drizzle some sriracha.
