Tomato and Basil Quiche


When it’s 100 degrees outside and you want to make a quick and healthy lunch, what is the best option? This crustless vegetable quiche can be eaten hot or cold and is bursting with flavors. It takes no more than ten minutes to make and combine few ingredients. Perfect for a light lunch!

  • 3 tomatoes sliced
  • 1 1/2 cup of shredded mozzarella
  • 6 eggs beaten
  • 1/2 cup of milk
  • salt
  • pepper
  • basil

In a large bowl, combine the beaten eggs with the mozzarella, milk, salt, pepper and basil. Pour in a large greased pan and arrange the sliced tomatoes on top. Sprinkle some basil. Bake in a preheated oven at 375 for 45min.
