I wanted to make a healthy version of chicken schnitzel but realized I ran out of breadcrumbs. I suddenly remembered that in Morocco there isn’t such a thing as buying breadcrumbs or flavored breadcrumbs. So I quickly toasted some homemade challah leftover and grind it with some spices. This is a must do recipe for a quick and healthy dinner!
For the breadcrumbs:
- 1/2 challah toasted
- 1 tbsp of italian seasoning
- 1 tsp of paprika
For the schnitzel:
- 1 pound of thinly cut chicken breast
- 1/2 cup of flour
- 1/2 cup of breadcrumbs
- 1 egg beaten
Prepare the breadcrumbs: in a food processor, grind the toasted challah with the spices. Set aside.
Set up three bowls: the flour, beaten egg and the breadcrumbs. First coat the chicken in flour; shake off the excess. Then the egg and finally the breadcrumbs mixture. Heat up the oven to 425. Spray a pan with cooking spray. Lay the chicken breast flat and spray them with cooking spray. Bake for 10 minutes and flip them over. Spray them again with cooking spray and bake for an additional 10 minutes.
