I have always been very curious about the process of making this dish and last night I decided to give it a try. When I planned diner, I only wanted to make a simple oven baked chicken on the bone but changed my mind and decided to give a new twist to the dish.
- 1 chicken cut into 8 pieces
- 2 onions slicely thin
- 2 garlic cloves grated
- 3 tbsp of smoked paprika
- 1 tbsp of olive oil
- Salt
- Pepper
- BBQ sauce:
- 1 cup of ketchup
- 3 tbsp of brown sugar
- 1 tbsp of balsamic vinegar
- 2 tbsp of Worcestershire sauce
- 3 tbsp of smoked paprika
- 1 tsp of salt
- 1 tsp of pepper
Heat up olive oil in a large pan. Sauteed the onions for a few minutes on a low fire, add the pieces of chicken, salt, pepper, garlic and smoked paprika. Remove from the fire after 10 minutes or after the chicken becomes brown.
In a small pot, mix the bbq ingredients and bring to a simmer.
Preheat the oven for 425. In a large oven proof pan, place the chicken and pour the bbq sauce over. Cover and bake for 1 hour to 1 hour and 10 min.
Once the chicken is ready, remove the pieces from the pan and start shredding the chicken with a fork. Pour over the bbq sauce.
