I came up with this recipe one morning this week at around 6am thinking that it already feels like summer and I should probably work on some healthy and easy summer recipes. I like the taste of caramelized onions in the quiche because it balances with the cheese perfectly. It’s so easy to make and doesn’t require too many ingredients. Best part of it: you can eat it cold or hot!
- 5 eggs
- 1 medium size onion sliced
- 1/2 cup of grape tomatoes
- 1/3 cup of chopped fresh parsley
- 1 large tomato sliced in rounds
- 1/2 cup of skim milk
- 1/2 cup of shredded mozarella
- 3 tbsp of Parmesan for garnish (optional)
In a large skillet, heat up 1 tbsp of oil. Sauteed the onion and lower the fire for about 15 to 20 min until they become brown but not burnt. In the meantime, mix the eggs, milk, parsely, mozarella, salt, pepper, grape tomatoes and add the onions once they are ready.
In a 9 inch round baking pan previously greased, pour the mix and arrange the sliced tomato on top. Sprinkle some Parmesan.
Bake at 375 for 30-35min.
