Blueberry Clafoutis

I wait all year for blueberry season to start. My first summer dessert choice is a blueberry clafoutis. It’s light, airy and sweet. I like having it with a refreshing cup of iced tea. Honestly this is the easiest dessert I have made and if you are running out of time, it simply involves mixing few ingredients and using the best blueberries you have. Their delicious taste will transform this easy recipe into one of those delicacies you always want to have, but not always want to share!

  • 2 cups of blueberries
  • 1 1/2 cup of milk or non dairy creamer
  • 1/2 cup of flour
  • 4 eggs
  • 2/3 cup white sugar
  • 1 tbsp vanilla extract

Grease a large baking dish and preheat oven to 425. In a large bowl, mix eggs with sugar. Add flour, milk and vanilla. Pour the batter in the dish and add the blueberries on top. Shane the dish to remove the air.

Bake for 25 to 30min.
