I make this recipe once a week in the summer because I like the fact that it doesn’t need to be heated up. You can eat it warm or cold and add any sauce you feel like to eat. I generally like to top the cakes with spicy mayo.
I found it very easy to make. You can bake them or fry them. I usually bake them in the oven.
- 8 ounces of surimi
- 2 tbsp of spicy mayo
- 2 tbsp of regular mayo
- Salt pepper
- Paprika
- 1/2 cup of whole wheat breadcrumbs
- 3 tbsp of fresh dill
- 2 tbsp of lemon juice
- 1 egg
In a food processor, mix all of the ingredients. With wet hand, make small balls and flatten them. Lie them on a greased baking sheet and baked for 20-25min at 350.
