This is my first choice for summer dinner. I love the fresh taste of cod fish mixed with tomatoes and basil. I could eat it every night. Plus, it’s easy to make and doesn’t require too many ingredients. I usually serve it with a side of sautéed potatoes and green salad.
3 medium size tomatoes
1/2 cup of fresh basil
1 pound of cod
1 tsp of balsamic vinegar (optional)
1 tbsp of paprika
Preheat the oven to 400. In a large pan, mixed the tomatoes sliced with the basil. Sprinkle salt, pepper, olive oil and balsamic vinegar.
Roast for about 20 min. In the meantime, rinse the fish and dry it. Sprinkle salt, pepper and paprika. Cover with 1 tbsp of olive oil. Lay on top of the tomatoes and bake for 15 minutes.
