I came up with this recipe last week while my oven broke, I was looking for a healthy dessert recipe that didn’t need any baking. I always wanted to look into the raw vegan recipes but my moroccan roots were holding me onto the heavy cooking.
So I jumped into it and discovered a new way of making desserts – healthy, sweet and light. It was very easy to make, didn’t require too many ingredients and honestly I didn’t feel guilty eating two slices of it. This dessert goes perfect with a scoop of vanilla ice cream on the side.
1 cup of raw almonds
1 1/2 cup of pitted dates
1/2 cup of chocolate chips
In a food processor, pulse the almonds until it turns into a very thin powder. Add the dates and keep processing until everything starts to stick together. In a bowl, melt the chocolate chips. Add to the almond/dates and mix very well.
