Simple and delicious pasta 

After many failed attempts of making pasta, I finally came up with this recipe for the sauce. First I need to specify that the cooking time of the pasta is very important. Many times I forgot the pasta over the fire for more than 30minutes and was wondering why they were terrible and so soft. I finally realized that I just had to read the directions on the box and sometimes 30 seconds less than the advised time is even better. 

For the sauce, I only use fresh organic tomatoes and the taste is definitely much better. I always enjoy a delicious and simple pasta dish without too much cheese. But with lots of different spices.

  • 8 medium size tomatoes
  • Olive oil
  • One small onion diced
  • 4 garlic cloves minced 
  • Salt pepper
  • Paprika
  • Basil
  • Oregano
  • Shaved Parmesan 
Dice the tomatoes in small. Heat up olive oil in a large pan, sauteed the onion and the garlic lower the fire, add the tomatoes and all the spices besides the parmesan. Cover and cook it for about 30min on a low fire, mixing with a fork to crush the tomatoes. 
Add a little bit of Parmesan toward the end and mix well. Boil pasta according to the package direction. 
Pour the sauce over and sprinkle Parmesan.
