Almond Crust pie with Mascarpone

I enjoy baking pies with almond crust because I love to eat desserts and need to feel less guilty about the sweets so I d rather use almond flour over regular flour. Also its more tasty.

  • 3 cups of almond flour
  • 3 tbsp of sugar
  • 5 tbsp margarine or butter
  • 2 tbsp almond extract
  • 1 tbsp vanilla extract
  • 1 tsp salt
  • 1 1/2 cup of firm tofu, drained and dried
  • 3/4 cup of sugar
  • 1 tbsp vanilla extract
  • 1 container of Tofutti cream cheese

Prepare the pie: Mix the margarine with sugar and add the almond flour. Add the salt and extracts and mix until until dough begins to form. If needed, add a little bit more almond flour. Wrap tight in plastic wrap and chill for an hour.

In a blender, mix the tofu with the tofutti cream cheese. Add sugar and vanilla extract.

Bake the pie for 15min on 350. Once it cools down, spoon the mascarpone over with a spatula and decorate with fresh berries.
